  • 2 tablespoons butter
  • 1 onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 cups potatoes, peeled and diced
  • 4 cups fish or vegetable broth
  • 1 cup milk or heavy cream
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: cooked bacon bits for added flavor

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook for about 5-7 minutes, or until the vegetables start to soften.
  2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the diced potatoes, dried thyme, bay leaf, salt, and pepper to the pot. Stir to combine.
  4. Pour in the fish or vegetable broth and bring the mixture to a simmer. Let it cook for about 10-15 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, gently stir in the fish pieces. Be careful not to over-stir to avoid breaking up the fish. Let the fish cook in the chowder for about 5-7 minutes, or until it's opaque and flakes easily.
  6. Reduce the heat to low and pour in the milk or heavy cream. Stir gently to combine and heat through. Make sure not to boil the chowder once the cream is added to prevent curdling.
  7. Taste the chowder and adjust the seasoning with additional salt and pepper, if needed.
  8. Remove the bay leaf from the chowder and discard.
