  • 2-3 cloves garlic (minced)
  • 1/2 cup carrots (diced)
  • 1/2 cup frozen peas
  • 2-3 green onions (sliced)
  • 2 eggs (beaten)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for added flavor)
  • Salt and pepper to taste

Instructions:

  1. Cook the rice according to the package instructions and allow it to cool. You can also use leftover cooked rice, which tends to work better for fried rice.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 1-2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add another tablespoon of vegetable oil if needed. Add the minced garlic and sauté for about 30 seconds until it becomes fragrant. Be careful not to burn the garlic.
  4. Add the diced carrots and frozen peas to the skillet. Cook for 2-3 minutes, or until the vegetables are tender but still slightly crisp.
  5. Push the vegetables to one side of the skillet, creating a space for the eggs. Pour the beaten eggs into the space and scramble them until they are fully cooked.
  6. Now, add the cooked rice and shrimp to the skillet. Mix everything together and break up any clumps of rice.
  7. Pour the soy sauce and oyster sauce (if using) over the rice and shrimp. Stir well to evenly coat the rice and incorporate the sauces.
  8. Season with salt and pepper to taste. Remember that soy sauce already contains salt, so be cautious not to over-salt the dish.
  9. Add the sliced green onions and give it a final toss to distribute the ingredients evenly.
