Ingredients:

  • 1 pound fresh crab meat (lump crab meat works best)
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped

  • 1/4 cup all-purpose flour
  • 4 cups seafood or fish stock
  • 1 cup heavy cream
  • 1 cup whole milk

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and garlic, sauté until the onions become translucent and aromatic.
  2. Sprinkle the flour over the onions and garlic, stirring continuously to form a roux. Cook the roux for a few minutes until it turns a light golden color, but be careful not to let it burn.
  3. Slowly pour in the seafood or fish stock, stirring constantly to prevent lumps from forming.
  4. Add the bay leaf, ground nutmeg, salt, and pepper to the pot. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, allowing the flavors to meld.
  5. Stir in the heavy cream and whole milk, and let the soup continue to simmer for an additional 5-10 minutes.
  6. If using dry sherry, pour it into the soup and stir it in. This optional ingredient adds a wonderful depth of flavor to the bisque.
  7. Carefully fold in the crab meat, being gentle to avoid breaking up the lumps too much. Let the soup simmer for another 5 minutes to heat the crab through.
