Instructions:

  1. Finely chop the shrimp until you get a slightly chunky texture. Do not use a food processor as it can result in a paste-like consistency.
  2. In a mixing bowl, combine the chopped shrimp, bamboo shoots, water chestnuts, minced garlic, grated ginger, a dash of sesame oil, soy sauce, oyster sauce, cornstarch, sugar, and white pepper. Mix everything thoroughly until well combined. The cornstarch will help bind the filling together.
  3. Take a dumpling wrapper and place a small spoonful of the shrimp filling in the center of the wrapper.
  4. Moisten the edges of the wrapper with a little water to help it seal better.
  5. Fold the wrapper in half to form a semi-circle and gently press the edges together to seal the dumpling. Make sure there are no air pockets inside.
  6. To create the classic pleated look, hold the sealed dumpling with both hands and use your thumb and index finger to create pleats along the top edge of the wrapper. Pinch and fold the edges together, making a crescent shape with the filling exposed in the center. Repeat this process for each dumpling.
  7. Line a steamer basket with parchment paper or cabbage leaves to prevent sticking.
  8. Arrange the dumplings in the steamer, leaving some space between them to avoid sticking during steaming.
  9. Bring the water in the steamer to a boil and steam the dumplings over high heat for about 6-8 minutes or until the wrappers become translucent and the filling is cooked through.
  10. Carefully remove the shrimp dumplings from the steamer and arrange them on a serving plate.
  11. Serve the dumplings hot with your favorite dipping sauce, such as a mixture of soy sauce, vinegar, and a dash of sesame oil.

Enjoy your homemade shrimp dumplings! They make a delightful appetizer or a tasty addition to any dim sum spread.
