PREPARING THE OCTOPUS

CLEANING THE OCTOPUS

With the fresh octopus, you will need to separate the tentacles from the body and remove the entrails. You can use each section of the octopus for a different dish and, therefore, you will want to make sure you have the right section for your recipe.


To clean your octopus, follow these instructions:


•    Make a cut on the sac at eye level
•    Cut out the eyes
•    Go in through the incision you have made and cut out the beak
•    Rinse under cold running water

 

BOILING OCTOPUS

After cleaning the octopus, you can directly add them into your recipe. But the most common methods to get fully cooked octopus is to boil them first.

Here is the instruction to boil the octopus:


•    Fill a stockpot or pan with cold water and add the herbs, vegetables, and stock of your choice.
•    Bring the stockpot to the boil — heat over high heat until a rolling boil begins
•    Add your octopus to the boiling water — let the water come to a boil again
•    Cover the stockpot and leave until tender — this process can take anywhere from 25 to 45 minutes
•    Remove the octopus and let it rest before you serve it.

Octopus has a very delicate flavour and dressing it with some good olive oil and seasoning it well is often enough. A popular way of introducing extra flavour is by cooking it over the hot coals of a barbecue or a grill, making it more charred and smoky edge.


For inspiration you can go for Mediterranean flavour which would typically get paired with seafood such as lemon, fennel, chopped parsley, and tomatoes.
